The same production disciplinary of Barolo DOCG defines precisely the main characteristics of Barolo Chinato, which is recognized as one of the most peculiar products of this restricted area of the Langhe, particularly indicative of a special philosophy of life.
Barolo Chinato, as the name imposes, is based on a Barolo DOCG which has finished its aging period and is suitably flavored with the use of a large number of herbs and spices, which must always refer to “China Calissaia”. , from which the name derives.
Each producer has indulged in defining their own “recipe” which is a well-kept secret and uses different proportions of different products in addition to the aforementioned and fundamental China Calissaia: vanilla, rhubarb, orange blossom, cinnamon, and many others. The real Barolo Chinato requires the use of natural products and not aromas, and therefore a long and delicate transformation process is required.
The various selected herbs are infused in pure alcohol for an appropriate maceration period. The infusion is then filtered and added to the Barolo DOCG which, after adequate further aging in Slavonian oak barrels, to ensure proper amalgamation, finally becomes Barolo Chinato.
The intense aroma, the harmonious flavor of great balance and long persistence, and the particularly pleasant full taste with a slightly bitter finish, make it ideal for finishing the meal, for desserts in general and in particular after bitter chocolate.
It can also be used, with the addition of hot water and an orange peel, for the preparation of a delicious “grog” as was the normal tradition of the Langhe families, who prided themselves in offering it to the most important. guests.
