Grappa di Barolo Cagliero is obtained only from Barolo pomace, that is from the skins of Nebbiolo grapes from Barolo after soft pressing. Therefore they are rich in moisture and juice, and the transformation can take place slowly and gently, keeping the fermentation process under strict control.
The distillation of the real Grappa di Barolo is performed only in traditional “steam” stills which allow to obtain the best quality since the process takes place with extreme sweetness and facilitates the elimination of impurities.
Clear grappa is thus obtained from the still, which is transferred to special old and precious barrels of precious woods, especially chestnut, where it is left to age for long periods in cellars dedicated to this specific use.
The true Grappa di Barolo is therefore a single-variety grappa, aged in wood and aged, in full purity, without the addition of flavoring products. It must have a minimum alcohol content of 40% vol., But normally reaches 43 ° and must be served at a temperature around 17 ° C.
